I've been cheering on 4 teams this year the St. Louis Rams, Mehlville High School, Mizzou and Lindenwood. ope you enjoy this easy to make Cheeezzzzy Spicey Guacamole Bean Dip that I was able to whip up on Show-Me St. Louis with Julie Tristan.....
Cheeezzzy Spicey Guacamole Bean Dip (Serves 8)
1 (16-ounce) can Old El Paso Spicey Fat Free Refried Beans
3 large avocados
3 tablespoons fresh lime juice
2 (8-ounce) containers light sour cream
1 packet Old El Paso Hot and Spicey Taco Seasoning Mix
1 (10-ounce) can Ro-Tel Original Diced Tomatoes & Green Chilies
2 cups of shredded Sharp Cheddar Cheese
Tortilla Chips
Preheat oven to to 350
Spread a layer of Old El Paso Spicey Fat Free Refried Beans in the bottom of an 8x8 quart glass baking dish. Pit and peel the avocados and place in a bowl. Mash the avocados together with the lime juice and spread on top of the refried beans. In a seperate bowl stir together the sour cream and Old El Paso Hot and Spicey Taco Seasoning Mix. Spread over the avocado.
Add Ro-Tel Original Diced Tomatoes & Green Chilies and follow up with layer of shredded Cheese.
Heat the dip for 15 to 30 minutes or until heated through and the cheese is a bit melted.
